baking gone wrong!

Ok, so I always try to make things a little healthier and this time it was a big mistake! I tried to make walnut fudge. I got the recipe a while back but I can't remember exactly from where. Anywho, I subsituted fat free evaporated milk for just plain evaporated milk. I thought my adding fat free milk it should make it healthier in some way right? Well my fudge did not come out as fudge exactly.....

First I got all my ingredients ready.

yep lots of chocolate chips!
Pour in your sugar, evaporated milk and butter over medium heat
Add chocolate and marshmallow
It might look funny but keep stirring!
See!
Pour in pan and put to chill

This fudge might look okay but looks can be deceiving because when I picked it up it was as soft as goo....

But it was still yummy of course. It just didn't set correctly. But I don't like to let things go to waste so I used it to make a Peanut butter and Fudge sandwich:)

All I did was  take two pieces of bread and on one I spread peanut butter, while on the other fudge. I put it on a skillet and let it get soft and chocolaty
It was good yet so bad!
But don't be afraid to try this fudge recipe, just make sure you don't use fat free evaporated milk, use the regular one. The taste came out really good too it just didn't harden enough. Here's the recipe:

Walnut Fudge

  • 7 ouces of marshmallow cream
  • 1 1/2 cups white sugar
  • 2/3 cup evaporated milk
  • 1/4 cup butter
  • 1/4 tsp salt
  • 3 cups semi sweet chocolate chips
  • 1/2 chopped walnuts
  • 1/2 tsp vanilla extract

1. First line an 8x8 pan with foil
2. In a large sauce pan over medium heat combine butter sugar and evaporated milk. Bring to a full boil and cook for 5 minutes stirring constantly.( very important to cook for those 5 minutes!)
3.Remove from heat and pour chocolate chips and marshmallow creme and stir until everything is smooth.
4. Stir in nuts and vanilla. Pour in pan and allow to chill in fridge for at least two hours or until firm.

I hope yours comes out better than mine. Enjoy!

Toffee & Chocolate Chip Blondies

So this weekend, I was inspired by Heath Toffee Bars. They are soooo good:) I mean who doesn't love toffee covered in milk chocolate?

I decided to make some toffee and chocolate chip blondies and let me just say  that were just amazing! They were so soft and chewy like regular blondies, but the toffee added a nice little crunch that made them over the top.

They were so good my family finished them in a heart  beat!

 Its a pretty simple recipe.

Instead of chopping up actual Heath bars, I just used Heath toffee bits and some chocolate chips.

It is probably better to mix the actual toffee bits and chips with a wooden spoon instead of the mixer.

Pop in the oven until golden brown........

and voilĂ !

Serve with a scoop of ice cream and you've got perfection!

Toffee and Chocolate Chip Blondies

1 cup All Purpose Flour
1/2 tsp Baking Powder
1/8 tsp Baking Soda
1/2 tsp Salt
1 cup Brown Sugar
1/2 cup melted butter
1 large egg
1 tsp vanilla
1/2 cup Heath Toffee Bits & 1/2 cup chocolate chips

1. Preheat oven at 350 degrees.
2. Cream together the brown sugar and melted butter. Beat in egg and vanilla.
3. Add dry ingredients to butter and mix until well blended.
4. Stir in Heath bars and chocolate chips and pour in greased 8x8 pan.
5. Bake for 30-35 minutes.
6. Let cool before serving. Enjoy!

This is new....

Hi! My name is Rachell and this is my first blog! I'm really excited to start this and to start posting all my baking adventures. I love to bake and cook, especially with my mom. My goal is to bake or cook something at least once a week. I would love to do it more often but everyone is so busy these days and it seems as if there's just not enough time in the day. But to start off, I should tell you about myself and this blog I guess. I am 19 years old and I discovered this new hobby not too long ago. I love to try baking new things so I am always on the search for something different. However, my family...not so much. My brother always complains why I didn't just make regular chocolate chip cookies instead of my new version. But, its okay there's always a first time for everything:)  I can't wait until this weekend  to start baking and cooking. So stay tuned!
